Chicken Kormak


Kormak is very wholesome, very simple to make, very delicious & very mild on the spices that it goes down very well with the children. I love my food to look & taste home-made.....So, of course my style of Kormak would be cooked with whole boiled eggs, large chunks of onions & potatoes, tomato wedges & garnished with green peppercorn, plucked right from my garden.....Ahhhhh soooo satisfying!!!

Ingredients to blend:

  • 1 large bulbs onions
  • 4 cloves garlic
  • 1 inch ginger
  • 1/2 cup kormak powder
Other ingredients:

  • 1 whole chicken, cut into 16 pieces
  • 2 tbsp ghee
  • 6 pcs cloves
  • 8 pcs cardamoms
  • 2 pcs cinnamon stick
  • 2 pcs star anise
  • 3 boiled eggs
  • 1 large tomato, quatered
  • 1 whole large onion, quartered
  • 6 cups water
  • 1 cup evaporated milk mixed with 2 tbsp lime juice
  • 2 tsp salt
  • 1 tbsp pepper
  • 2 stalks coriander leaves, cut in 2” lengths

Method:

  1. Heat the ghee in a large heavy pot. Put in the cinnamon stick, cloves, cardamoms & star anise.
  2. Sautee’ the blended ingredients till a beautiful aroma is released. Put the chicken in.
  3. Coat the chicken with sautéed ingredients. Pour the water and let the stew simmer on low fire until the meat is tender.
  4. Add potatoes and boiled eggs. Continue to cook till potatoes are cooked.
  5. Put in the tomatoes & quatered onions.
  6. Pour in the combined evaporated milk with lime juice.
  7. Flavour with salt & pepper.
  8. The moment the chicken is cooked through and the potatoes done, sprinkle with the coriander leaves, crispy fried shallots.
  9. Serve with Nasi Beriani, Nasi Dhal, Nasi Tomato, Nasi Minyak or plain white rice.
