Pancake Stacks for Ideal Milk Celebrity Chef Challenge

When we were given 5 minutes to decide what to cook to suit the theme "Food for Kids" or "Santapan Kanak-kanak", for the Ideal Celebrity Chef Challenge, I juggled with a few ideas about what to cook using Ideal Evaporated Milk that looks attractive and tasted delicious... The whole package! I decided it was best to stick with what I cooked often at home... Pancake Stacks!
Ingredients:
  • 1 1/2 cups all-purpose flour, sifted
  • 3 teaspoons baking powder, sifted
  • 1 teaspoon salt
  • 1 tbsp sugar
  • 1 cup Ideal evaporated milk
  • 1/4 cup water
  • 1 egg
Method:
  1. In a large bowl, sift together the flour, baking powder, salt and sugar.
  2. Make a well in the center and pour in the milk, egg. Mix well until smooth.
  3. Heat a lightly oiled griddle over medium high heat. Add a little butter.
  4. Pour the batter onto the griddle, using approximately 1/4 cup for each pancake.
  5. Brown on both sides and serve hot.
Ingredients for Chocolate Sauce:
  • 1/2 cup Ideal Evaporated Milk
  • 1 cup Chocolate Chips
  • 3 tbsp sugar
Method for Chocolate Sauce:
  • Put all the ingredients in a small pot.
  • Cook on low fire.
  • Continue cooking & stirring for about 10-15 minutes or until the sauce thickens.
Ingredients for Stewed Apples:
  • 2 green apples, peeled, cored & cubed
  • 3 tbsp brown sugar
  • 1 cup of water
Method for Stewed Apples:
  • Put all the ingredients together in a small pan.
  • Cook for 10 minutes on low fire or until apple softens.
  • Layer in between the pancakes.
