COCONUT FUDGE SLICE
(using the PHILIPS Air Fryer)

Ingredients:-
  • 1 cup plain flour
  • ½  cup caster sugar
  • 1 cups dessicated coconut
  • 2 tbsp cocoa powder
  • ¾  cups butter, melted
  • ½  tsp vanilla

Method:-
  1. Put all the dry ingredients into a large bowl. Mix well.
  2. Pour the melted butter & vanilla over the dry ingredients. Combine it all together.
  3. Spread the coconut mixture in a greased tin. Press the mixture until firm & compact.
  4. Bake in a preheated 170ºC preheated PHILIPS AIR FRYER oven for 20 minutes.
  5. Once cool, pour icing evenly over the slice.
  6. Sprinkle with desiccated coconut & cut into slices once the icing is set.

Ingredients for Chocolate Icing:-
  • ½  cup icing sugar, sieved
  • 2 tbsp cocoa powder
  • ½  tbsp butter
  • ½ tbsp hot water
  • ¼ cup dessicated coconut

Method:-
In a large bowl, put in the icing sugar & cocoa powder.
Put in the butter and pour the hot water. Stir till well mixed.
Pour over the slice & sprinkle with desiccated coconut.

Cumin Crispy Tapioca
(using the PHILIPS Air Fryer)

Serves 4

Ingredients:~
·      ½ kg tapioca, cleaned & boiled
·      2 tsp cumin, ground
·      2 tsp coriander, ground
·      1 ½ tsp salt
·      2 tsp turmeric powder
2 tbsp of corn oil

 
 

Method:~

1.    Cut tapioca into chips.
2.    Sprinkle the cumin, coriander, salt & turmeric powder over the tapioca.
3.    Toss the spice evenly, coating the tapioca& drizzle with corn oil.
4.    Preheat the PHILIPS Air Fryer at 200ºC, set for 10 mins.
5.    Arrange the marinated tapioca into the PHILIPS Air Fryer.
6.    Once the tapioca chips are crisp on the outside, remove for the PHILIPS Air Fryer and serve immediately.


I You may drizzle some corn oil or olive oil over the Tapioca Chips if you prefer.

I cannot explain this love I have for Crumbles..especially Apple Crumbles.  The many many times I have made crumbles, I always seem to enjoy the simple ones, with just flour butter,sugar and spices. Lately however, I love chunks, I love texture and I love the extra crisp and I love the natural sweetness of dates & cherries. So I tried out this recipe which I must admit is pretty good!

As always, the PHILIPS Air Fryer has made my life so easy. From initially using it for just frying, then reheating, adding crisp. Of late I have enjoyed baking using it.  I don't have to heat up a whole oven when I'm just baking for two! My daughter and me!

 
Ingredients:~

·      3 green apples, peeled, cored & sliced
·      1/3   cups flour
·      1/3  cup butter
·      ½ tsp salt
·      ¼  cup brown sugar
·      ¼ cup sugar
·      ¼  cup oats
·      ¼ cups muesli
·      ½ tsp nutmeg powder
·      ½ tsp cinnamon powder
·      3 dates, chopped
·      3 red cherries, chopped
·      3 green cherries, chopped
·      8 walnuts, chopped


Method:~

1.   Grease the baking dish.
2.   Arrange the apple slices in the baking dish. Sprinkle a little brown sugar & cinnamon powder lightly over the apples.
3.   Place the flour, oats, muesli, salt, both sugars, nutmeg & cinnamon powder in a large bowl. Mix well.
4.   Put in the butter and rub it into the dry ingredients till it resembles clumpy breadcrumbs.
5.   Sprinkle the crumble over the apple slices.
6.   Bake the Apple Crumble in a preheated PHILIPS Air Fryer for 30 minutes at 170ºC .
7.   Serve with warm custard or ice cream.

(using the PHILIPS SOYAMILK MAKER)


I love snacking...... Din, my husband always pampers me with all sorts of snacks. Most of them are really tasty treats but some of them may not  be too healthy. Of late, I have made an effort to be more watchful of everything that I snack on. Thus I have made more effort to make homemade snacks instead. One of them is my long time favourite, my very own Chicken Liver Pate'.

All the Philips appliances that I have owned have made my life dramatically easier. Over the course of years that I have owned this SoyaMilk Maker, I have developed so many new recipes and revised so many old recipes to create the same or better flavours with the use of these appliances. So, do enjoy my version of Chicken Liver Pate' made easy with the SoyaMilk Maker!

Ingredients:~
·      500 gms chicken liver
·      ½ cup butter
·      1 large onion chopped
·      ½ tsp ground thyme
·      ½ tsp ground bay
·      1 tsp salt
·      1 cup of cream
·      1 tsp ground black pepper
·      125 gms button mushroom

Method:~
1.   Place all the ingredients into the PHILIPS Soya Milk Maker.
2.   Press the ‘RICE PASTE’ and then press ‘START’.
3.   After 25 minutes, the Chicken Liver Pate’ should be ready.
4.   Pour into ramekins and refrigerate.
5.   Serve with crackers or melba toast.

I love simple traditional recipes and I truly love this recipe in particular, due to the story behind it. My husband's aunt's mother (that makes her Din's grand aunt right?) created this recipe, cooking it often. Her recipe was sought after as she used to supply her Seri Kaya Bakar to the Sri Menanti Palace in Negeri Sembilan  for the royal family. And what's more, she cooked this exact recipe for my parents-in-law's wedding in 1955, for all the guests to enjoy! Lovely! 

Using the Philips Air Fryer to bake this Seri Kaya Bakar is so amazing....I get to see the Seri Kaya Bakar really puff up in comparison to the conventional oven. This is due to the hot air pressure making the texture fluffier and softer..... and it takes only half the time to cook than normal!





·      ¾   cups plain flour
·      1 cup thick coconut milk          
·      5 pandan leaves, blended with ¼ of water & strained for the juice
·      ½ tsp green colouring
·      4 large eggs, beaten       
·      ¾ cups caster sugar       
·      2 tbsp ghee, melted       
·      ½ tsp cinnamon powder          
·      1 tbsp sultanas

1.    Beat eggs, sugar, pandan juice and green colouring together in a large bowl.
2.    Pour in the coconut milk.
3.    Put in the flour gradually and beat till well combined and becomes a smooth batter.
4.    Heat a cake tin in a preheated 180ºC PHILIPS Air Fryer.
5.    When the tin heats up, put a little bit of ghee.
6.    Pour the Seri Kaya into the tin till ¾ full.
7.    Bake in the PHILIPS Air Fryer for 12 minutes.
8.    After 7 minutes or when the Seri Kaya Bakar is ¾ cooked, sprinkle with cinnamon powder and sultanas over the top.
9.    Bake for another 5 minutes.

Those words of appreciation makes me holding the classes worth every bit the effort.

Ingredients:~
  • 3/4 cups flour
  • 3/4 cups cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup butter
  • 1 cup sugar
  • 3 large eggs
  • 1 tsp vanilla essence
  • 1/2 cup buttermilk

Method:~
  1. Sieve all the dry ingredients in a bowl.
  2. In a mixing bowl, cream the butter & sugar till fluffy.
  3. Add eggs one at a time, beating well in between each egg.
  4. Add the vanilla essence.
  5. Add the dry ingredients alternating with the buttermilk, beginning and ending with the dry ingredients.
  6. Pour into the cupcake liners.
  7. Bake in a preheated 180ºC oven for 15 minutes.
  8. When cool, ice with frosting & decorate as desired.

Frosting

Ingredients:~
  • 1/2 cup butter
  • 1/4 cup cocoa powder
  • 2 cups icing sugar
  • 2 tbsp milk

Method:~
  1. Sieve the icing sugar & cocoa powder together.
  2. Add the icing sugar gradually, alternating with milk until it has a smooth consistency.
  3. Spread on top of the cooled cupcakes.

I really love re-living memories of food, especially for mum. Pulut Tekan sprinkled with Sambal Serunding Udang was a breakfast typically enjoyed by my gentle & loving arwah Tok Bak... Very very nice indeed and so easy to make :-)

Ingredients for glutinous rice:~
  • 1 cup glutinous rice, soaked for 20 minutes & drain
  • 1 tsp salt
  • 1/2 cup of thick coconut milk

Ingredients for Prawn Sambal Serunding:~
  • 3 tbsp oil
  • 8 shallots, sliced finely
  • 3 cloves of garlic, chopped
  • 1 inch turmeric root, skinned & pounded till fine
  • 4 red chillies, seeded & pounded finely
  • 1/2 cup dried prawns, soaked in hot water till it swells & pound
  • 2 cups grated coconut
  • 2 tsp salt
  • 1 tsp sugar

~Method for glutinous rice~
  1. Steam glutinous rice for about 15 minutes in a steamer.
  2. Remove from steamer and place in a large clean bowl.
  3. Sprinkle with salt.
  4. Pour the warm coconut milk over the steamed rice & mix evenly.
  5. Shape it into compact circular discs or any desired shape while it is still hot.
  6. Put it aside to cool & set.

~Method for Prawn Sambal Serunding~
  1. In a medium-sized pan, heat oil. Sautee' the onions, garlic & turmeric root.
  2. When limp, put in the pounded prawns. Cook till fragrant.
  3. Add in the grated coconut & stir till well combined.
  4. Flavor with salt & sugar.
  5. Continue cooking until desired dryness is achieved.
  6. Sprinkle over or coat the shaped glutinous rice with Prawn Sambal Serunding.

I had such fun teaching how to make this Oreo Cupcakes to the kids in my 'Kids Can Cook' class. Super easy......super yummy!


Ingredients:~


· 1/2 cup flour

· 2 tbsp cocoa powder

· ½ tsp baking powder

· 1 pinch baking soda

· 1 pinch salt

· 1/3 cup butter

· ½ cup brown sugar

· 1 pinch salt

· 1 egg

· 1/3 cup of milk

· ½ tsp vanilla essence

· 6 Oreo cookies


~Method for Oreo Cupcakes~


1. Sieve all the dry ingredients in a bowl.

2. In another bowl, beat the butter until it is fluffy.

3. Add in the sugar. Beat further.

4. Put in the egg and vanilla essence. Mix well.

5. Put in the dry ingredients, alternately with the milk in three batches.

6. Place papercups in the baking tins.

7. Put one Oreo cookie at the base of the papercup.

8. Pour in the cake batter over the cookie till ¾ full.

9. Continue to fill up all the papercups until all the batter is finished.

10. Cook in a preheated 180ºC oven for about 15-20 minutes until a skewer comes out clean. Allow to cool on a rack.


Oreo Icing


Ingredients:~

· ½ cup whipping cream

· ½ tbsp icing sugar

· ½ tsp vanilla essence

· 2 tbsp Oreo crumbs


~Method for Oreo Icing~


1. Cream the whipping cream, icing sugar & vanilla essence.

2. Fold in the Oreo cookie crumbs.

3. Ice the cupcakes & top with Oreo Cookie
