Italic
We had Tofu Omelette at a restaurant recently and really enjoyed it. I did something similar for my family and the good thing about making it at home is that I can improvise it to suit everyone! Smaller-sized tofu, add onions, more pepper...etc. Everyone's happy!

Ingredients:~

  • 3 eggs
  • 1 tbsp milk
  • 2 tbsp of oil
  • 1 block of tofu (any type can be used, I use the hard tofu but the cylinder ones are also lovely), cut into cubes.
  • 1 onion, sliced into rings
  • 1 tsp salt
  • 1 tsp black pepper

~Method~

  1. Beat the eggs in a clean dry bowl.
  2. Put in some salt & pepper.
  3. Pour in the milk and set aside.
  4. Put the oil in a small non-stick pan with high sides.
  5. Sautee' the onion briefly.
  6. Then pour in half the eggs and stir.
  7. When the eggs are half-set, put the tofu over the eggs.
  8. Pour in the balance of the eggs and reduce the heat.
  9. After about 2 minutes or when it had browned on the bottom side, flip the omelette over and cook another 2 minute.
  10. Serve immediately.

I am a great lover of Tofu.....cooked in any way. It is exceptionally soothing when cooked in a light tauchu gravy. So fast & simple to cook, with so few ingredients and importantly, so beautiful!

Ingredients:~
3 pieces of hard tofu, halved into triangles & deep fried briefly
1 tbsp cooking oil
1 bulb of medium sized onion, sliced
3 cloves of garlic, sliced
1 tbsp tauchu (fermented soya beans)
1/2 tbsp tamarind, squeezed in 1 cup of water, drain for the juice
1 red chilli, sliced lengthwise 3/4 way ,in half & deseeded
1 tsp salt
1 tsp sugar

~Method~
1. Heat oil in a small pan. Sautee' onions & garlic till soft.
2. Put in the tauchu and tamarind juice.
3. As soon as the water boils, add the salt, sugar & red chilli.
4. Immerse the deep- fried, triangle tofu into the tofu gravy.
5. Enjoy with hot white rice.

Eating this dish always brings such a warm, wholesome feeling to my tummy. Cooking it is so easy & takes such little time, you won't even realize you've cooked it. Enjoy this simple, healthy & delicious dish........

Ingredients:

  • 5 soft Tofu
  • a pinch of salt
  • 2 tbsp oil
  • 1 large red onion, sliced
  • 3 cloves garlic, sliced
  • 2 tbsp dried shrimp, soaked & pounded
  • 1/4 cup sweet soy sauce
  • 1/4 cup salty soy sauce
  • 1/2 tsp crushed black pepper

Method:

1. Wash & rinse the tofu.
2. Pat gently with a pinch of salt.
3. Deep fry the tofu. Be very careful when flipping the tofu over as you don't want to break it.
4. In another pan, heat 2 tbsp oil & sautee' the onion,garlic & dried shrimp till it is very dry.
5. Pour in both the soy sauces into the sauteed mixture. Add pepper.
6. Taste. Pour generously over the tofu.
7. Perfect when eaten immediately while still hot with white rice.

This tofu is so simple & delicious which provides a healthy dose of good protein. The soft delicate taste of tofu, soaked in soothing, delicious gravy gives a smooth taste with wholesome values....I am a staunch believer of simplicity in terms of ingredients, method of cooking & presentation...so this recipe suits me to a tee!

Ingredients:

  • 1/2 yellow onion, sliced thinly
  • 2 cloves garlic, sliced thinly
  • 1 tbsp dried prawns, soaked & pounded
  • 4 tofu, cut into 6 equal-sized cubes & washed
  • 3 cups coconut milk
  • 1 tsp salt

Method:

1. Pour the coconut milk into a small pot. Cook on very low fire & keep stirring.
2. When the milk begins to boil, put in the onions, garlic & dried prawns.
3. Put the tofu gently into the simmering coconut milk.
4. Flavour with salt.
5. Totally soothing with white rice but just as lovely on it's own.

To make sure my kids don't go hungry at school during this fasting month, I thought Tofu in Soy Sauce will make them happy and full. A good dose of good protein in tofu is the answer, and a dash of light soy sauce gravy to soothe the palate.....so early in the morning!


Ingredients:

  • 4 pieces of hard tofu/ tauhu keras, washed & cut into triangles(basuh & potong segitiga)
  • 1 tsp salt/garam
  • 3 cups of oil for deep frying/minyak masak
  • 3 cloves of garlic/bawang putih, chopped finely
  • 4 tbsp light salty soy sauce/ kicap masin
  • 1/2 cup of vegetable stock/stok sayur or 1/2 tsp of stock powder diluted in 1/2 cup water
  • 1 tsp pepper/lada sulah

Method:
1. Flavour the tofu with salt.
2. Fry in hot oil, heated in a pan until golden brown. Remove & drain. Put aside.
3. In a separate pan, prepare the soya gravy by heating 2 tbsp of oil, taken from the same oil used to fry the tofu.
4. Sautee the garlic on medium heat very briefly without browning it.
5. Pour in the soy sauce & stock.
6. When the liquid boils, flavour with pepper.
7. Fantastic when served while hot! I love to eat this with fresh sprigs of spring onions!

Caranya:
1. Sapukan garam rata-rata di tauhu.
2. Panaskan minyak didalam periuk & gorengkan tauhu sehingga kekuningan. Angat & ketepikan.
3. Ambil 2 sb minyak dari gorengan tauhu tadi dan tuan di dalam kuali yang lain.
4. Tumis bawang putih sebentar sahaja....jangan sehingga terlalu kuning.
5. Tuankan kicap masin & stok.
6. Bila mendidih, masukkan lada sulah.

I think I am addicted to Sira Tempe & Ikan Bilis.....It's so crunchy, it's so spicy, it's tasty. I couldn't possibly stop........

Ingredients:

  • 1 slab tempe, cut into finger lengths then slice thinly, marinade with 1 tsp turmeric & 1 tsp salt, then deep fried till crispy on low-flamed hot oil
  • 1 cup anchovies, deep fried till crispy
  • 1/2 cup peanuts, deep fried till golden brown, cool.
  • 1/4 cup cooking oil
  • 3 heaped tbsp cili paste
  • t tsp salt
  • 2 tbsp sugar
  • 2 tbsp vinegar

Method:
  1. Heat oil in a pan.
  2. Put in the chili paste. Keep stirring till relatively dry.
  3. Put in the vinegar, salt & sugar. Cook & continue stirring till the texture becomes like a paste & is relatively dry.
  4. Put in the tempe, anchovies & nuts. Toss the ingredients around so it coats evenly.
  5. Switch off the flame. Scoop it out immediately.
  6. When cool, put in an air tight container.
